How much to order
Shell-on prawns lose about 40% in cleaning, so 500g gross is roughly 300g on the plate — enough for two. Order by what you want to eat, not what you want to carry home.
Cooking it
Prawns take three minutes and not a second longer. They are done the moment they curl and turn opaque; past that they go rubbery and nothing recovers them. Cook them last, add them to the gravy at the very end, and take the pan off the heat while you still think they need another minute.
Keeping it fresh
Everything is cut after you order and delivered chilled, never frozen — so the clock starts when it reaches your door, not when it left a warehouse. Refrigerate it straight away and use it within two days, or freeze it the same day it arrives.

Cleaned and deveined with the shell on by default, because the shell keeps them from drying out. Ask for peeled in the instructions.
