Mud Crab — how much, and how to cook it

How much to order

A kilo of live crab yields roughly 400g of meat, so one crab is a generous portion for two people who do not mind working for it.

Cooking it

Crab is about the shell as much as the meat. Crack the claws before they go in the pan so the masala reaches inside, and keep the gravy thick enough to cling. Twelve to fifteen minutes is enough — like prawns, crab overcooks into cotton. Serve it with something to soak up what is left in the pan, because that is the best part.

Keeping it fresh

Everything is cut after you order and delivered chilled, never frozen — so the clock starts when it reaches your door, not when it left a warehouse. Refrigerate it straight away and use it within two days, or freeze it the same day it arrives.
