How much to order

A dozen lasts a couple about a week at one egg each most mornings. The 30-tray is the sensible buy for a family.

Cooking it

Country eggs are smaller, so two of them stand in for one large commercial egg in a recipe. The yolk is firmer and holds its shape, which makes them better for frying and poaching than for a fluffy omelette. Keep them out of the fridge door — the temperature swings there are what shortens their life.

Keeping it fresh

Everything is cut after you order and delivered chilled, never frozen — so the clock starts when it reaches your door, not when it left a warehouse. Refrigerate it straight away and use it within two days, or freeze it the same day it arrives.

How long do they keep?

Two to three weeks refrigerated. Drop one in water to test — a fresh egg sinks and lies flat.
