How to Choose Fresh Fish (Without Guesswork)

Look at the eyes
Fresh fish have clear, bright, slightly bulging eyes. Cloudy, sunken eyes mean the fish is past its best.
Check the gills
Lift the gill cover — gills should be bright red or pink and moist, not brown, grey or slimy.
Smell and feel
Fresh fish smells clean and mild, like the sea, never sour or “fishy”. The flesh should be firm and spring back when pressed, not leave a dent.
