Fresh vs Frozen Meat: Which Is Actually Better?

Taste, texture, nutrition and safety — here is the honest comparison, and why we only sell cut-to-order, never-frozen meat.

The short answer

Fresh, cut-to-order meat keeps more of its natural juices, texture and flavour than meat that has been frozen and thawed. Freezing forms ice crystals that rupture cells, so on thawing the meat loses moisture (that pink liquid in the tray) and can turn rubbery.

Taste & texture

Never-frozen chicken and mutton stay tender and springy, sear better and soak up marinades evenly. Thawed meat often steams instead of browning because of the extra water it releases.

Nutrition & safety
